Yesterday was so productive! I had just gone to the grocery store and I was just in a cooking mood. I roasted some chicken to make chicken enchiladas with and here you see the parts of the chicken that don't get eaten (at least in this house) along with some veggie scraps all ready to be turned into delicious chicken stock. I woke up (figuratively) yesterday morning and realized that buying chicken stock in a box is a crazy thing for me to do.
For one thing, why pay so much money for something made out of food scraps?
For another thing, those aseptic boxes are made out of paper, aluminum, and ... plastic. Of course. The boxes are "recyclable" according to an industry website but by that they mean the paper is separated out from the aluminum and plastic and the paper is recycled. Also, I don't know about your area, but here they don't accept these boxes for recycling, so they just go in the trash.
So I'm not going to do it anymore. This bubbled away all morning making the house smell delicious. I also made a meatball & kale soup (big family favorite), horseradish carrots, and a loaf of bread.
